Coconut Muffins



Ingredients:
  • 2 1|2 cups unbleached flour
  • 1|2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda.
  • 1|2 teaspoon salt
  • 1 1|4 cups milk
  • 1|3 cup margarine melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1|4 cups grated coconut

    Method:
    Preheat oven to 400F. Lightly coat the muffin cup with non stick spray. Combine flour. Sugar, baking powder, baking soda and salt in a large bowl., stir until blended. Add remaining ingredients all at once. Mix until evenly blended. Do not over mix. Divide batter among the muffin cups Bake 22 to 25 minutes until a toothpick inserted in the middle comes out clean. Cool on wire rack before removing from the cups.
