Coo Coo
Ingredients:
  • 11/2 pounds cornmeal flour
  • Coconut milk from 1 dried coconut
  • 1/4 lb margarine
  • 10-12 ochras
  • 1 tsp salt
  • 1tbsp oil

    Method:
    Wash and cut ochras in circular slices. Heat oil in a medium iron pot. Fry ochras for approx 20 seconds (don't let it get brown). Add coconut milk. Leave until water starts to boil. Add cornmeal gradually while stirring ( all the coconut milk should dry up). Add more coconut milk until the corn flour can be seen getting soft and wet again. Add margarine and salt. Cook for about 5-10 or untill corn flour appears to be geetting back a thick consistency while turning continually. Pour out in a greased dish and let cool. Cut and serve with stew especially callalloo.
