Boiled Corn
Ingredients:
  • 1 doz ears of corn
  • 1 hot pepper
  • 1 onion
  • 1 cup of coconut milk
  • 2 cloves of garlic (minced)
  • Salt to taste
  • Bouquet of chives, parsley and thyme

    Method:
    Clean ears of corn and set aside. Boil meat in water for 30 minutes before adding corn, minced seasonings and bouquet. Leave to simmer for 15 minutes, then add coconut milk. Taste for salt content, and add salt, if necessary and whole pepper. Cook until grains of corn are soft and the liquid reduced.
